Today I am sharing a cool summer salad prepared with watermelon and mint. This way you can eat something light which is healthy too and will help to rehydrate during this summer. A simple dressing is used for the salad made with lime juice, olive oil and sugar/honey. You can also sprinkle some freshly crushed black pepper. Some people prefer to add feta cheese in this salad; however, I have kept it as simple as possible.
Watermelon Mint Salad
Ingredients
Watermelon – 2 cups, seedless and cut into chunks
Mint leaves – torn into small pieces, 1 to 2 tablespoons
Lemon juice – 1 tablespoon
Olive oil – 1/2 tablespoon
Salt – a pinch
Sugar – 1 or 2 teaspoon (optional)
Procedure
1. Take watermelon chunks and mint leaves in a large bowl. Sprinkle a pinch of salt and toss it.
2. In a small bowl, whisk lemon juice, oil and sugar until sugar is dissolved. Drizzle the dressing (lemon juice + oil+ sugar/honey) over salad and finally toss gently to mix it. You can avoid sugar and add honey instead of sugar or you can avoid it completely as watermelon has its own sweetness.
Perfect salad for the hot weather, mint and watermelon go well together..
