The climate of Bangalore is always soothing and pleasant but here we are feeling the heat now. So I can imagine about rest of the India. It is better to take precautions to keep yourself healthy. Restrict yourself from oily foods because in summer it is difficult to digest oily foods. Include fresh fruits and veggies in your diet. Instead of a heavy meal you can have a bowl of healthy salad during lunch and you won’t feel hungry. This kidney bean and lettuce salad is that kind of salad which contains lot of protein from kidney bean and cheese, calcium from cheese and cucumber will keep you hydrated. I have used lime juice and little olive oil for dressing.
Kidney Bean and Lettuce Salad
Kidney bean / Rajma – 1/2 cup, soaked overnight and boiled
Cucumber – diced, 1/2 cup
Iceberg Lettuce – 1/2 cup, torn into pieces
Cheese – 1/2 cup, cut into cubes
Salt to taste
Black Pepper Powder – 1/2 teaspoon
Lemon Juice – 1 tablespoon
Olive Oil – 2 teaspoon
1. Take boiled kidney bean, cucumber, cheese and lettuce in a bowl. Toss it once.
2. Now sprinkle salt and black pepper powder.
3. In a small bowl add lemon juice and olive oil. Stir well. Dressing is ready.
4. Add the dressing to the salad and give a good toss. Serve immediately.
