Whenever we are in hurry in the morning, we try to make some quick fix breakfast dishes including bread butter or bread jam or ready made breakfast cereals. These kind of dishes gives you carbohydrates and energy. However, your body is not getting proper vitamins and minerals from these food because none of these dishes have vegetables or fruits. If you are eating breakfast cereals with milk you get some extent of vitamins or minerals but not in adequate quantity. 

Here is one quick fix breakfast dish which contains lot of vegetables. You can cut the vegetables and keep them in ziplock bags or containers and put them in refrigerator. So it becomes easy to reduce your preparation time for the dish and a healthy meal is ready quickly.

Vermicelli Upma / Vegetable Vermicelli Upma


Vermicelli - 2 cups
Potato - 1 medium, cut into cubes
Carrot - 1 medium, cut into cubes
Cauliflower - small florets,  1/2 cup
Green peas - 1/4 cup
Beans - cut in to 1/2 inch pieces, 6 to 7
Salt to taste
Mustard seeds - 1/2 teaspoon
Ginger - 1 inch, chopped
Onion - 1 medium, chopped
Green chillies- finely chopped, 2
Turmeric Powder - 1/4 teaspoon
Lemon juice - 2 tablespoons
Refined Oil - 4 tablespoon
Curry Leaves -  5 to 6


1. Boil the vegetables in water till they are almost (80%) cooked. Drain the water from vegetables and keep them aside.

2. Now heat water (just double quantity of the vermicelli) in a vessel. When it starts boiling add vermicelli, salt and 1 tablespoon oil. It wil take very less time to get cooked. Cook till slightly underdone and drain the water. Once it is cooked, wash under cold running water and keep aside.

3. After that, heat oil in a pan and add curry leaves and mustard seeds. Once they started to crackle add chopped onion and ginger, saute till the onions change the colour to light brown.

4. It is time to add all the vegetables,  turmeric powder and green chilli and saute for few minutes.

5. Finally add the boiled vermicelli and salt to taste. Mix them well.

6. Switch off the gas and add lemon juice and serve .
