Stuffed Paneer Bhurji Paratha/Paneer Bhurji Paratha

After a long holiday, I am taking some time to get back in to the rhythm of daily life. So I could not post recipes in a regularly. I really miss blogging whenever I am irregular, hence I am trying hard to get back into the daily routine. Today I am going to share a recipe of stuffed paratha which itself is a meal and you don't need any side dish to eat this. Normally, we all prepare stuffed paneer paratha, however I tried Stuffed Paneer Bhurji Paratha. 


 
The benefit of this paratha is whoever does not like the raw smell of paneer (cottage cheese) can relish this dish. 



Stuffed Paneer Bhurji Paratha/Paneer Bhurji Paratha

Ingredients

For Stuffing

Cottage Cheese/Paneer - 11/2 cup, grated
Onion - chopped, 1/3 cup
Ginger - finely chopped, 1 teaspoon
Green Chilli - finely chopped, 1 teaspoon
Turmeric Powder - 1 teaspoon
Salt to Taste
Cumin Seeds - 1 teaspoon
Tomato - 1 medium, finely chopped
Cumin Powder - 1 teaspoon
Red Chilli Powder - 1/2 teaspoon
Coriander Leaves - chopped, 2 tablespoon
Refine Oil - 2 tablespoon + 2 tablespoon for frying parathas

For Dough

Whole Wheat Flour - 2 cups
Oil - 1 tablespoon
Salt to Taste

Procedure

1. First knead a soft dough using whole wheat flour, oil, salt and water as required. Now cover the dough using a damp cloth for 20 minutes.

2. In a pan heat oil, and add cumin seeds, once they crackle add chopped onion fry till golden. 

3. After that add chopped green chilli and ginger. Next goes chopped tomato and cooked until the raw smell is gone. 

4. It is time to add dry spices including turmeric powder, salt, cumin powder and red chilli powder. 

5. After mixing dry spices, add grated paneer and give a good stir. If required add little water. Once the water dries up, add chopped coriander leaves and allow it to cool.



6. Now from the dough take out a big lemon size ball and flatten it using your palm and make a pocket. Put a spoonful of paneer bhurji stuffing and close it.

7. Roll the ball in to a circle with a diameter of 5 inch. Finally,  fry them with refined oil and serve hot with pickle.
