Dal Fry / Yellow Dal Fry

I often prepare dal fry to pair up with rice or roti. Recipe of dal fry is quite easy and tastes really good. I use Toor Dal for Dal Fry, many people use mix of moong, masoor and chana dal for the recipe of dal fry.  Dal Fry is a famous dhaba style recipe which you can find in the menus of each and every restaurants. Recently, I prepared this to serve with jeera rice. I have followed the recipe of Chef Sanjeev Kapoor.  Have you tried dal fry at your kitchen?? If not then just have a look at the recipe and can prepare it for tonight's dinner.

Dal Fry / Yellow Dal Fry


Split pigeon pea (toor dal/arhar dal) - 1 cup
Onion - 1 medium, finely chopped
Garlic - 1 teaspoon, finely chopped
Turmeric powder - 3/4 teaspoon
Salt to taste
Dry mango powder (amchur)- 1 teaspoon
Cumin seeds 1 teaspoon
Red chilli powder 1/2 teaspoon
Ghee - 2 tablespoons
Refined Oil - 2 tablespoon


Heat ghee & refined oil ( each one tablespoon) together in a pan. Now add half of the chopped onion and garlic, saute till they are golden brown in colour. Next add washed and soaked (15 minutes) dal into it. Add turmeric powder and salt. Add two cups of water and shift the mixture in a pressure cooker. Put two to three whistles and allow to release the pressure on its own. Next put the dal in the pan (on medium flame) and add dry mango powder and boil for 5 minutes. Now in an another pan heat the remaining oil and ghee and add cumin seeds. Once they start crackling add remaining onion and garlic till they are translucent. Next add red chilli powder and finally add this seasoning in to the dal. Boil for 2 to 3 minutes and serve hot with roti or rice.
