Papad Ki Sabji

Papad ki Sabji is basically from Rajasthan. I never had this before my marriage. Once my husband cooked it and taste was awesome. It is Avijit's (My Husband) signature dish and he makes it really tasty. Nowadays I too prepare papad ki sabji. Normally, we use garlic papad for this but you can use any papad of your choice. You can use cumin papad or simple moong papad but I feel garlic papad gives the curry a different taste. 


Papad Ki Sabji

Ingredients

Papad - 4 to 5
Potato - 1 medium, cut into cubes
Onion - sliced, 1 big size
Garlic Paste - 1 teaspoon
Ginger Paste - 11/2 teaspoon
Tomato - 1 medium, sliced
Cumin Powder - 1 teaspoon
Turmeric Powder - 2 teaspoon
Coriander Powder - 1 teaspoon
Red Chilli Powder - 1 teaspoon
Cumin Seeds - 2 teaspoon
Green Chilli - 1 or 2
Refined Oil - 11/2 cup
Salt to taste
Sugar - 1 teaspoon

Procedure

1. First tear each papad into 4 to 6 pieces and deep fry them in oil and keep aside. 
2. Next fry the potatoes adding little turmeric powder and salt. 
3. After that reduce the oil and add cumin seeds. Once they crackle add sliced onion and after few minutes add ginger and garlic paste. 
4. Next goes all the dry spices like (turmeric powder, cumin powder, red chilli powder, coriander powder, sugar and salt to taste). 
5. Then add sliced tomatoes and cook till the raw smell is gone. Add 1/2 cup water and boil for 2 minutes. 
6. Finally, add fried potato and papad pieces. Add some more water and when they gravy consistency becomes thick switch off the gas and serve hot with plain rice or roti. If you wish, can garnish with handful of fresh coriander leaves.
