 Tofu Guchi is a good side dish for roti, naan or paratha. Tofu Guchi has vegetables like mushroom and capsicum which makes the dish tasty and healthy. Apart from that, the creamy rich gravy of the dish is really delicious. Though the list of ingredients for this dish is little lengthy however, if you taste once I am sure you would love to make it again. 

Tofu Guchi
Ingredients
Tofu - 200 gms, cubes

Mushroom - 2 cups, cut in cubes

Capsicum - 1 cup, cut in square shape

Onion Paste - 2/3 cup

Tomato Puree - 1/2 Cup

Tomato Ketchup - 2 teaspoon

Ginger Paste - 2 teaspoon

Garlic Paste - 1/2 teaspoon

Melon Seed Paste - 2 tablespoon

Cashew Nut Paste - 2 tablespoon

Garam Masala Powder - 2 to 3 teaspoon

Turmeric Powder - 2 teaspoon

Cumin Powder - 2 teaspoon

Red Chilli Powder - 2 teaspoon

Cumin Seeds - 1 teaspoon

Salt to taste

Dried Methi Leaves (Kasuri Methi) - crushed, 1 tablespoon

Sugar - 1 teaspoon

Refined oil - 1/2 cup

Procedure
Unpack the tofu and soak it in warm salted water for 10 minutes. Take it out from water and cut in to cubes. Now heat 1 tablespoon oil in a pan and saute the tofu pieces with salt and 1 teaspoon of garam masala powder. Keep them aside. Similarly saute mushroom and capsicum and keep them aside. Now for making the base heat oil in a pan and add cumin seeds. Once they started cracking add onion paste. Cook it till golden brown. Next add ginger and garlic paste and followed by dry spices like red chilli powder, cumin powder, turmeric powder, and salt. After 5 minutes add tomato puree and mix it well with other spieces. When oil starts separating add melon seed paste, cashew paste, tomato ketchup and sugar. After few minutes add sauted tofu, mushroom and capsicum. Add a cup of water and simmer the gas. Cover the pan with a lid and cook it for 5 to 8 minutes. Now add garam masala powder and crushed methi leaves from top.
