Achari Paneer

After a relaxing weekend, everyone has to face the Monday-blues!! However, you can beat your Monday morning blues and make a fresh start of a new week with lot of energy and positive power. Before going for a relaxing weekend, plan for you coming Monday and keep all the things (Office Bag, Files, Kid's School Bag, Uniforms, Office Clothes, etc) in place to avoid a busy, hectic Monday morning. Well, this is just a small tip to initiate  fresh organized week after a nice weekend. After coming back from work, again you have to think about dinner menu! What about some pickle and roti?? But then what will happen to the paneer that you bought last Friday and didn't cook it as you went for a short trip on weekend. Relax...I have a good recipe for you which is quite easy and tasty too. Achari Paneer is a famous Punjabi dish which tastes similar to pickle. We will use lot of Indian spices which we normally use to make pickle like Mustard seeds, Fennel Seeds,Onion Seeds and most importantly we will use Mustard oil to cook it. Though the ingredient list of Achari Paneer is little long, but most of the spices are available at your kitchen. So try it out and let me know your feedback...:) This is quite easy to cook so you can cook it in the morning and pack in lunch box with roti.

Achari Paneer 

Paneer - 200gms, cut into cubes
Onion - 2 cups, chopped
Green Chilli - 3 to 4, chopped
Turmeric Powder - 1 teaspoon
Curd - 1/2 cup
Garlic - 5 to 6, crushed
Ginger - 1 teaspoon, sliced and crushed
Dry Mango Powder - 11/2 teaspoon
Fennel Seeds - 2 teaspoons
Fenugreek Seeds - 1/2 teaspoon
Cumin Seeds - 1 teaspoon
Mustard Seeds - 1 teaspoon
Onion Seeds (Kalonji) - 1/2 teaspoon
Salt to taste
Mustard Oil - 4 tablespoon

Take out paneer block from freezer one hour before cooking. Heat water with one spoon salt and dip paneer block into it for half an hour. Take it out and make cubes using kitchen knife. Heat oil in a pan and add fennel seeds, mustard seeds, fenugreek seeds, onion seeds and cumin seeds. Allow them to crackle and next add chopped onions and green chillies. Fry till golden brown colour. Now add turmeric powder, crushed garlic pods and crushed ginger pieces. Beat the curd using spoon and add to spices slowly. After sometime add dry mango powder and salt as per taste. When the curd starts drying add paneer cubes and mix them well with all spices for 2 to 3 minutes. Switch off the gas and cover the pan using a lid for few minutes and then serve hot with roti or paratha or naan.
