Sambar

Just like dal, Sambar is not a regular dish at my kitchen, hence it gets the honour of special dish at our house. We really enjoy the tangy taste of sambar with goodness of veggies which makes it a healthy dish. Today we had a fusion lunch and the menu was Sambar from South and Fish Kalia from East served with regular rice and roti. Though it might sound awkward, however we really enjoyed our meal. Not only with rice, it goes well with idly and dosa also. This is not the first time I have prepared sambar  but never shared this popular recipe . Here I am sharing my way of preparing sambar.

Sambar

Ingredients

yellow lentils (arhar or toover daal) - 11/2 cup

Mixed vegetables - 1 cup cut into 1 inch cubes (Potato, Pumpkin, Bottle Gourd, Drumstick)

Small Brinjals - (4 to 5)

Sambar Masala - 11/2 tablespoon

Tamarind pulp concentrate - 2 teaspoon

Black Mustard Seeds - 1 teaspoon

Fenugreek Seeds - 1 teaspoon

Turmeric Powder - 1 teaspoon

Red Chilli Powder - 1 teaspoon

Curry Leaves - 7 to 8

Whole Dry Red Chilli - 2 to 3

Shallots or small onion whole - 7 to 8


Sugar - 1 teaspoon

Salt to taste
 

Refined Oil - 2 tablespoon



Procedure

Wash the dal and pressure cook with salt till absolutely tender. On the other side, heat little oil in a pan and saute all the vegetables with little salt and add them to cooked dal. Boil the dal covering with a lid until the vegetables are soft and tender. Now add turmeric powder, sambar masala, red chilli powder, salt, sugar and tamarind pulp. Heat oil in another pan and add curry leaves, mustard seeds, dry red chilli and fenugreek seeds. Once they splutter add them into cooked dal. Allow the dal to boil and cook for another 5 minutes under slow flame. Switch off the gas and serve it.

  4. Sambar is ever loved at home. I've been making and making until sometimes I'm not comfortable with the same type. Definitely this tempting versions of you is on my list any time soon.
