Dal Makhani

Dal Makhani is a popular Punjabi dish which has the flavour of "makkhan" (butter), so the dish name is Dal Makhani. In this dish mainly two types of lentil is being used. One is Whole black gram with skin or sabut urad dal and the other one is red kidney beans or rajma. Cooking dal makhani is really easy, however you cannot make instantly as soaking dals for overnight is the most important step in this recipe. If you are planning to prepare it for tomorrow, you must soak the dals tonight, there is no shortcut for this step :). Dal makhani is dish which has goodness of protein hence good for diabetic patient with less amount of butter.

Ingredients

Whole black gram (whole urad dal with skin/ Split urad dal with skin) - 1/2 cup
Red kidney beans (rajma) - 2 tablespoons
Red chilli powder - 1 teaspoonGinger - 1 to 2 inch pieces, chopped
Butter - 2 to 3 tablespoons
Refined Oil - 1 tablespoon
Cumin seeds - 1 teaspoon
Garlic -  6 cloves, chopped
Onion - 2/3 cup, chopped
Green chillies- 2, slit
Tomatoes - 2/3 cup, chopped
Garam masala powder - 1 teaspoon
Salt to taste


 Procedure

 Wash the dals and soak them overnight in enough water (3 cups). Now take the dals in pressure cooker and add  three cups of water with salt and half the red chilli powder, half the chopped ginger. Initially, slow the flame and later increase the flame and put 5 to 6 whistles. After releasing the pressure, open the lid and check if the rajma is soft. If not again cook on low flame till the rajma becomes completely soft. Next take a pan and heat butter and oil together in a pan. Add cumin seeds in it and when it crackles  add ginger, garlic and onion and sauté till golden in colour. Then add slit green chillies, tomatoes, red chilli powder and cook on high flame. When the tomatoes are cooked properly , add the cooked dal and rajma along with the water in it. Add some more water if required. Add garam masala powder and adjust salt. Now slow the flame and cover the pan with a lid and cook for sometime so that dals are well blended with spices. While serving add some chopped onion, tomato and coriander leaves from top. You can also add a spoonful of butter.
