Baingan Bharta  is a famous North Indian dish and available in restaurants all over India. Though Baingan Bharta can be eaten throughout the year but it has special connection with chilled and cold winter days. As soon as chill wind starts blowing from Northern Himalaya, we could see varieties of colourful vegetables in the market, just like "Sabzi Mela" . Nowadays, we get all the vegetables at any season but seasonal vegetables really taste different from the regular once and this time you could see the freshness in those vegetables which attracts you to grab it! Baingan Bharta/Begun Bharta/Punjabi Style Smoky EggPlant Recipe


Brinjal/Eggplant - Big size, weighing nearly 600 gms
Cumin seeds - 1 teaspoon
Onions - 2 medium, chopped
Ginger - 1 teaspoon, chopped

Garlic - 4-5 cloves
Garlic, chopped - 1 teaspoon
Green chillies - 2 , chopped
Red chilli powder  1 teaspoon
Salt  to taste

Sugar - 1 teaspoon
Turmeric Powder - 1 teaspoon
Tomatoes - 2


Wash, pat dry and prick eggplants in the body and insert garlic cloves inside those. Grease the eggplant body with mustard oil.  Roast it over open flame or in a tandoor/preheated oven until the skin scorches and starts peeling off and eggplants start to shrink. Allow it to cool. Now roast the tomatoes and keep aside. Remove skin of eggplant and mash the pulp completely. Mash the tomatoes separately. Heat oil in a kadai. Add cumin seeds and add chopped garlic, onions,  ginger and green chillies and cook for a minute. Then add roasted and smashed tomato and cook for few minutes till oil separates. Add red chilli powder and mashed roasted eggplants. Cook for seven to eight minutes over medium heat, stirring continuously. Add salt to taste and sugar.  You can garnish with chopped coriander leaves and serve hot. If you are a non-vegetarian you can beat and egg and add into this bharta. Cook for 7-8 minutes and it tastes more delicious.
