Doi Potol (Pointed Gourd in Yogurt/Curd Gravy)

After a long gap I am posting a recipe and I thought of posting something special. I choose a traditional bengali dish named Doi Potol (Pointed Gourd in Yogurt/Curd Gravy). I have learnt this from by beloved sister and when I cooked it everyone in the family relished this. Here is the recipe for my dear readers.

Doi Potol (Pointed Gourd in Yogurt/Curd Gravy)

Pointed gourd - 6 nos
Yogurt/Curd - 1/2 cup
Poppy seed paste - 2 to 3 teaspoon
Onion - 1/2 cup onion, sliced
Cumin Powder- 1 ½ teaspoon
Ginger -  ½ teaspoon, grated
Green chili - 4 to 5, slited
Kashmiri red chili powder - ½ teaspoon
Bay Leaf - 1 
Garam Masala whole - Cloves - 2-3,Green Cardamom - 2-3, 1 stick CinnamonTurmeric powder
Refined oil

1. Scrap the Potol/Parwal (Pointed Gourd) lengthwise leaving streaks of skin on alternate strokes. Make slit at both ends. Now toss the with little turmeric powder and salt. Leave them for a while (10 minutes).
2. Now heat ghee and refined oil together in a wok and fry the potols/parwals till it becomes golden brown in color.
3. Remove the excess oil from wok and put bay leaf  along with whole garam masala as a seasoner.
4. Add sliced oinons and saute it. Addition of a spoonful of sugar will enhance the taste. Next goes the crushed ginger. Now add the fried Potols.
5. In a small bowl add all the powdered ingredients and add little water to make a smooth paste. Add this paste into wok and fry it. Also add the poppy seed paste to make the gravy even more tasty. Adding poopy seed paste to this recipe is my own creation, you can try it.
6. Now beat the curd in a bowl, slow the heat and pour in the beaten curd gradually. Stir well to mix it thoroughly and cook for 2-3 minutes on high heat. Add salt to taste.
7. Lower the heat, cover and simmer for 10 minutes or till the potols are soft. Cook till the oil separates on the side. Add little desi ghee from top and serve hot with Pulow, Plain Rice or any other rice items.
