Aloo Palak / Alu Palak / Potatoes in Spinach Gravy

Last Sunday we had a great time! We were audience and our daughter was star performer...She rocked the stage and we were overwhelmed..Time flies so fast! Can't believe the little girl just born other day, now she is performing on the stage and that too on a Western dance form, Afro Jazz!! 




Just shared a pride moment of my life with all my dear readers!! Now coming back to today's recipe, I should say this is a very simple dish and goes very well with Indian Breads like roti, paratha or naan.


Aloo Palak / Alu Palak / Potatoes in Spinach Gravy


Ingredients


Spinach Leaves (boiled) - 2 cups

Potato - 2 meduim, cut into cubes and boiled
Onion Paste - 2 tablespoon
Garlic Paste - 1 teaspoon
Ginger Paste - 11/2 teaspoon
Red Chilli Powder - 1 teaspoon
Green Chilli Paste - 1 teaspoon
Hing - a pinch
Cumin Powder - 1 teaspoon
Keora Water - few drops
Lime Juice - few drops
Salt to taste
Sugar - 1 teaspoon
Turmeric Powder  - 1/2 teaspoon
Butter - 1 teaspoon
Refined oil - 3 tablespoon
Cumin Seeds - 1 teaspoon

Procedure


Make a smooth paste of boiled spinach leaves and keep aside. Now heat oil and fry the boiled potato cubes using salt until brown. Put cumin seeds and a pinch of hing in the remaining oil. Next add onion paste and garlic paste. Saute for 2 to 3 minutes. Next add ginger paste, turmeric powder, cumin powder, red chilli powder, green chilli paste and sugar. Mix them well and add spinach paste and cook until the raw smell is gone. Add fried potatoes in the gravy and add 1/2 cup water and cook under slow flame for 10 minutes. Add lime juice and keora water, switch off gas. Add a dollop of butter on top and serve hot.
