Winter is almost over and now it's spring time. However, whenever we talk about Winter, we can visualize varieties of vegetables in the Sabji Mandi (Market). You have lot of options for cooking and prepare colorful dishes. Nowadays, you get all vegetables throughout the year, but winter vegetables taste good in their season and it comes fresh. Winter special vegetables are Cauliflower, Carrot, Double Beans, Beet root, Spring Onion Flowers, Green Peas and many more. Recently I have prepared Winter Special Mixed Vegetable Curry. Here I am sharing the recipe for you.
Winter Special Mixed Vegetable Curry
Cauliflower - 2 cups, finely chopped
Potato - 1 cup, cut in small dice shaped
Carrot - 1 cup, cut in small dice shaped
French beans - 1 cup, finely chopped
Ginger paste - 2 teaspoon
Cumin powder - 2 teaspoon
Turmeric powder - 1 teaspoon
Cumin Seeds - 2 teaspoon
Sugar - 1 teaspoon
Green Chilli - 2
Salt to taste
Blanch Cauliflower separately and keep aside. Blanch potato, beans and carrot and drain the water. Now heat oil in a pan and add cumin seeds. Once it starts crackling, add cauliflower and stir for 5 minutes. Now add other vegetables and stir on high flame.
After 5 minutes, reduce the flame and add turmeric powder and green chilli. Cover the pan and cook the vegetables on medium flame until they are soft in texture. Next add salt, ginger paste, cumin powder and sugar. Stir them well to mix properly. Add little water and cover it for another 5- 10 minutes. When it becomes dry in nature, switch off the gas and serve it with roti or rice.
