Cinnamon flavoured Banana Pancake/ Banana Pancake / Use of Leftover Banana / Use of Overripe Banana

Banana Pancake is a healthy breakfast option especially for a fussy eater or toddler. Overripe bananas are the best used to make this heathy dish. We often have one or two leftover bananas in our fruit basket. When the yellow skin of the banana turns little brown, normally we try to avoid having it. However, we can prepare a very good pancake using them as they are easily smashed and mix well in the pancake batter which is difficult to do using fresh ones. I have added a lovely cinnamon and tutti fruity twist into it.

Serve: 4 to 6 numbers
Ingredients
Overripe Banana - 2
Flour - 11/2 cup
Baking Powder - 1/3 teaspoon
Egg - 2
Cinnamon Powder - 1 teaspoon
Milk - 1 to 2 cup
Sugar - 1/3 cup
Butter - 1 tablespoon
Salt - 1/2 teaspoon
Tutti fruity - 2 to 3 teaspoon


Procedure
Peel the banana skin and mash them well in a bowl.



 Take another bowl and mix all the dry ingredients (flour, baking powder, salt sugar, cinnamon powder) together. Now add mashed banana and beaten egg to this mixture. Stir very well so that there will not be any lumps. Now make up the consistency of the batter  by adding milk slowly into the batter. Next add the tutti fruity.  Heat a non-stick pan in gas and add little butter. Rotate the pan to spread the butter and put a ladle full of batter in the pan. Rotate the pan once again to spread the batter round shaped.


 Cook for 5-8 minutes. When one side is done, turn up the other side and cook similarly. Serve it as breakfast or tiffin.
